This will make your tongue slap your brains out. That’s right- it will make you wanna slap your mama, and even your grandma. No fish will be safe from you any more once you figure out they can taste this good.  

Just kidding. Sort of. 

This works well with any white flaky fish like flounder or crappie. A big thanks to Frank and Laurie File who turned me on to this recipe a few years ago. It is my own variation off a recipe called ‘the very best fish recipe ever.’

 1-2 lb of fish fillets (flounder, crappie, or similar)

sauce:

3/4c Dukes Mayo

1/2 c Parmesan cheese

2 tbsp chopped or dried dill 

1/2 stick softened butter

a few dashes of Tabasco

Salt to taste

1/2 tsp black pepper

2 tbsp minced garlic or garlic powder

Pat fillets dry, put on a baking sheet (with a lip on it) and put under a low broil for 5 minutes or until the fillets turn white most/all the way through.

Combine ingredients for the sauce in a bowl. 

Spoon out the sauce onto the already broiled fillets (don’t worry about it clumping, it will melt)

Put back under low broil until the sauce turns brown and bubbly- don’t walk away from the oven, it will only take a sec. 

Serve and enjoy! Good sides to put with this are French bread, rice, green beans or some kind of potato.
