Recently, I was gifted some king mackerel fillets (always welcome in this house!) and I decided to try something new and different. Not that I am a king mackerel genius, because I have only cooked with it a handful of times. Most of those engagements involved copious amounts of soaking in Italian dressing and a hot grill, with the occasional venture into pan-searing with butter. All tasty treats, indeed! This time, I was convinced to give a different type of recipe- basting the pieces in barbecue sauce and then wrapping in bacon. Very simple. Baste, wrap, place a toothpick to secure the bacon, and grill until the bacon is done. Baste again on the outside with BBQ, give a few extra minutes, then eat. These turned out great!
